Love these setups and anxious to see more. Matt, you'll have to highlight your recent camping setup here.
Our family had campers that we used often when we were young. Most of the time it was at a lake where we would take our boat out for skiing and day trips. Later, I would go camping with a tent but it was only for once or twice a year. Now, with having a family, we've taken a lot of major trips but always stayed at hotels. I've been wanting to take them out camping but wasn't sure if or how they'd enjoy it so I thought we'd take it slow.
I find it more difficult in Texas. There are fewer park areas and the majority of them are packed and require reservations months in advance. I've looked into 'Glamping' with the family since I didn't want to purchase a camper that might not get used very much. Not sure if everyone would enjoy it, so we've only purchased a modest tent and using some of my older gear that I kept around.
In a couple of weekends, we hope to make our first venture out to a secluded and less well known park.
Our tent is a Ozark Trail 10 person with 3 rooms;
In the past we've used a cheaper electric cooler/heater for keeping food on long trips but have since upgraded to a Dometic 37Q Freezer/Cooler. Love this thing! Ran it at 32*F for 30 hours on a half-charged car battery before the auto-detect low-batt triggered. It's been very useful and we take it almost everywhere.

We've got a blow up mattress for the old folks, a cot for whoever and a cold hard ground for the less fortunate but I hope it's fun. Have a portable grill and some fire wood laying around that needs to be used. The rest we'll scrounge up somehow and I keep wondering what we'll forget. Better not be the beer and coffee...
