That should be fine. They can take a human being towed or the weight of the boat hanging in the davits, so they should hold the motor, no trouble.
Not a complete idiot - some parts are missing.

"On the towing rings, I'm planning on clipping the outboard to them via a cable and carabiners, in the unlikely event the outboard detaches. If they are designed for towing I'm presuming they'll be strong enough."

Yes, as ChrisParish says, they're certainly strong enough for that which is exactly what I do - I assume you keep the cable short enough to stop the outboard from rising off the transom? I also put a clip through the holes in the transom clamp handles once tightened, so they can't unscrew themselves due to vibration.
cheers

Whilst out in the Solent chop with a few of the lads from here the engine sounded like it was missing a cyl or cavitating really badly, I looked at the engine & yes it was still there but only just. The screws for some reason had come loose to the point that the engine was bouncing around on the transom. Locked the screws up & it was fine so now I keep an engine lock on all the time so the screws can’t come loose & the only way I can loose the engine is if it takes the complete transom to the bottom as well.
